  As the new school year takes off, so does about a million other things! The days grow busier and busier as the year draws to an end with shorter days and bustling holidays. It creates a need for me to save as much time and energy as possible. My favorite time saver is meal prepping. With a big family of seven, it’s more of a ‘must-do’ than an option. I set aside time every Sunday to meal prep for the upcoming week. That time is well spent when the hustle and bustle of our daily schedules gets overwhelming! Just grab a freezer meal and pop it in the oven or microwave, viola! This is especially true for our mornings.   Back to school means back to busy schedules and juggling all the exciting things the new school year will bring. Often, it also means eating on the go - between practices, recitals, and school events. After last year, our system of meal prepping went out the window! With everyone being home all the time, I found myself doing less planning and more “I don’t care what you eat, as long as you eat.” Sounds terrible, right? I’m blaming it on pure exhaustion. After cooking more than I have ever cooked in my life, I was running out of ideas and energy. Four kids, a picky-eater husband, and one tired momma hanging on by a thread thanks to coffee and energy drinks – it was a mess. Thankfully, we are starting to see a light (at least, we think) and I’m choosing to focus on that!
